The avocado is the mother fruit. Whether you have a taste for it or not, it’s vital to appreciate avocado as the foundation of the pantry, the conductor of the symphony, the strongest link in the chain, the landmark, the soul of all other foods.  It’s wonderful that avocados have gotten attention in recent years for their health benefits. They go far beyond what’s reported, though. You don’t know food until you understand the avocado.

Even though the skin of most avocados is inedible, it is loaded with hundreds of undiscovered phytochemical compounds, many of which are infused into an avocado’s flesh as it grows.  Some of these phytochemicals are isothiocyanates, which are involved with the color of the yellow-green flesh and help restore stomach and intestinal linings. When you are suffering from digestive disorders of any kind, avocados can come to the rescue. Easy to digest, their creamy flesh is the ultimate gut soother for those with food sensitivities, Crohn’s disease, colitis,  or  IBS.  Avocados possess anti-inflammatory compounds that have an aspirin-like quality without thinning the blood; this reduces the narrowing and swelling of the digestive tract.  This fruit also has polyp-reducing properties, helping you to prevent or rid yourself of these small growths of the intestinal lining.

Avocados are amazing for the brain,  too.  A healthy source of omega-6 fatty acids, can help restore the central nervous system and alleviate Alzheimer’s and dementia. Eating avocados also has an anti-aging effect on the skin, reducing dryness, giving you a healthy glow, and contributing to the disappearance of dark under-eye circles. They also contain anti-radiation agents that are phytoestrogen, meaning that they can stop estrogen-related reproductive and colon cancers.  Avocados’ benefits go far beyond what I have room to include here. This means that in addition to the ways avocados help our bodies, they fill us spiritually with nurturing, motherly love. When we need to offer care to others for example, when helping a friend or loved one through tough times eating avocados helps us pass along this maternal energy. And when we’re the ones who need love, either to keep us going as we tend to those around us or because of upheavals in our own lives, avocado is the ultimate comfort food. Bring avocado into your life as a teacher of unconditional love, both toward yourself and toward others, and watch your capacity for compassion grow and flourish.

  • For noticeable benefits, eat one avocado a day. For extreme benefits, eat two per day.
  • Along the way, from harvest to display, people handle the avocados that you eventually buy in the store, and with each person who handles it, an avocado takes on some of her or his energy. Before you cut into an avocado that you’ve purchased, hold it in your hands for 30 seconds. This will identify the avocado as yours and connect its cells with your individual energy, being, soul, and DNA, making it the most nutritious it can be for your personal needs.
  • When we think of travel foods, we often think of packaged snacks: trail mix, energy bars, potato chips, crackers. Yet the avocado is an amazing travel food. Try packing a few on your next trip as a fresh alternative to the norm of stale greasy, or dehydrating road food. All you’ll need to do when you get hungry is slice and twist open an avocado, then spoon out the flesh.

SALSA AVOCADO BOATS

Beautiful and simple, these avocado boats are the perfect appetizer or snack to share. All the bright, bold flavors of your favorite salsa are nestled inside of a cool, creamy avocado. Make a double batch of the salsa ahead of time and have it on hand for any time the urge strikes.

  • 2 avocados
  • 1½ cup diced tomato
  • 1 cup diced cucumber
  • ¼ cup diced the onion
  • ¼ cup minced cilantro
  • 1 garlic clove, minced
  • 1 lime, juiced
  • ⅛ cup minced jalapeño
  • ⅛ teaspoon of sea salt
  • ⅛ teaspoon cayenne (optional)

Halve the avocados and remove the pits. Combine all the remaining ingredients in a small bowl. Scoop the salsa into the center of each avocado half and serve!
